    If you can, use an organic chicken, as they tend to be much leaner than commercial. If not, skim off the excess fat from the pot as the chicken simmers. A few leaves of fresh sage may be used in place of the thyme. For the broth in Step 1, feel free to jazz it up with lemongrass, ginger, turmeric or additional garlic. The more fragrant the better.

    Ingredients

    • 1 whole organic chicken (about 2 kg)
    • 1 bay leaf
    • 1/2 teaspoon whole peppercorn
    • 2 garlic cloves
    • 6 medium carrots, peeled
    • 6 celery ribs, washed
    • 1 fennel bulb
    • 4-5 stems of each fresh thyme and parsley
    • 1 teaspoon fine sea salt, divided
    • 1 Tablespoon olive oil
    • 1 large sweet onion, diced
    • 12 oz (340g) bag of dried egg noodles
